Our direct client is the nation’s largest private charter yacht / cruise company in the US. They are seeking a Catering Sales Account Manager for their multiple large yachts based in Washington D.C. The successful sous chef, in conjunction with the Executive Chef, participates in managing back-of-the-house cruise execution to ensure consistently high levels of quality, sanitation, service and customer satisfaction while maintaining a high level of profitability.
Job Description
• Acts as the on-duty kitchen manager for cruises and manages the kitchen staff to ensure
adherence to safety procedures and all health department sanitation codes
• Recruits, trains, and schedules kitchen staff when necessary to fill vacant positions
• Recommends to the Kitchen Manager & F&B Director the promotion of kitchen staff members
• Helps develop and execute incentive programs
• Ensures effective execution of each cruise (back-of-the house only)
• Resolves guest service issues, in conjunction with the on-duty Restaurant Manager
• Participates in monitoring and controlling all costs associated with the operation of the
kitchen in accordance with budget
• Participates in maintaining food, suppliers, and equipment purchasing systems
• Operates all restaurant systems (PC, restaurant cost analysis software,)
• 3+ years of total kitchen experience in full-service/banquet, high volume environment. Must include 1 year of kitchen staff management experience.
• 2+ years formal culinary training; OR 2 years additional kitchen experience in a full-service/banquet, high volume environment
• ServSafe Certified
